Jeffrey M. Pilcher has been teaching classes on the history of food and drink for more than twenty years. He is the author of Food in World History (2006), Planet Taco: A Global History of Mexican Food (2012), and editor of the Oxford Handbook of Food History (2012). He is also articles editor of the peer-reviewed journal, Global Food History. His current research examines City Food in comparative perspective and the global spread of beer.
