As part of a SSHRC-supported research project on multicultural histories of Toronto’s cuisines, we have been mapping the city’s culinary infrastructure across the 19th and 20th centuries. We will demonstrate existing historical maps, talk about how they have been used in research and teaching, and seek input on how to make the 2020 map as useful as possible.
