Branching off from his research on vegetarianism and countercultural foodways, Joel has turned to the historical study of protein — at once a concept of science and medicine, also a cultural form vitally fascinated with our bodies, commanding the nature of our cuisines and dictating the types of food we grow. He hopes to contribute to the Culinaria project as much as he will learn from it, and believes his involvement will improve his cooking as much as his academic work. He holds a Jean Armor Scholarship in Canadian History.
