Paul Cohen is Associate Professor of History and Director of the Centre for the Study of France and the Francophone World at the University of Toronto.  A historian of early modern France, he pursues research interests in a range of distinct areas: the formation of nation-states, the social history of languages; cultural identities; and early modern empire.  He also publishes on issues of contemporary concern in France, including higher education and economic and social policy.  Pursuing a distinct interest in the history of food and wine in modern France, he is currently working on a book-length history of the natural wine movement in France.
